Ají de Pollo

Ají de pollo comes from the northern reaches of Chile, where Andean flavors meet the coast. Chicken simmers in a smooth, golden sauce of ají peppers, onion, and garlic until fall-apart tender, then is served over rice with boiled potatoes — warming, gently spicy, and deeply comforting.

The sauce is silky and fragrant, with a fruity, mellow heat that builds slowly, while the chicken turns spoon-tender. Served over rice with a wedge of boiled potato, every bite is savory, creamy, and just a little bit fiery.

Step by stepInstructions

  1. Season the chicken with salt and pepper; heat the oil in a large pot over medium-high heat and brown the chicken in batches for 6 to 8 minutes per side; set aside.
  2. In the same pot, cook the onions for 6 minutes until soft, then add the garlic, cumin, and oregano and cook 1 minute.
  3. Blend the ají peppers with 1/2 cup of the broth until smooth and pour it into the pot with the remaining broth.
  4. Return the chicken to the pot, bring to a simmer, cover, and cook over low heat for 30 minutes until the chicken is very tender.
  5. Stir in the cream, simmer uncovered 5 minutes more, and adjust the seasoning.
  6. Serve the chicken and sauce over rice with a boiled potato wedge and a sprinkle of cilantro.

💡 Chef tips & storage

Ají amarillo can be found frozen in Latin markets — or use a habanero with a red bell pepper for a similar fruity heat. The sauce thickens as it rests; loosen it with a little broth when reheating.
