Omani Lamb Madghout

Madghout is Oman’s answer to the great rice dishes of the Gulf, and its name means drowned — a clue to what makes it special. The rice is cooked directly with the lamb, rather than in a separate pot, so every grain soaks up the meat’s juices until the whole dish tastes intensely of lamb. It is the Friday lunch of Omani homes, served with a simple tomato sauce and eaten with the right hand.

One pot, deep flavor

Because the rice cooks in the meat’s own broth, the flavor runs deep: each grain is glossy and savory, carrying cardamom, cumin, and the tart note of dried lime. The lamb, simmered until it is nearly falling apart, is tucked into the rice to steam in the final minutes. It is simple cooking with an enormous payoff, and it proves you do not need many ingredients to feed a family well.

Step by stepInstructions

  1. Heat the ghee in a large pot and brown the lamb deeply on all sides, about 8 minutes per batch. Remove and set aside.
  2. Cook the onion until golden, about 6 minutes, then add the garlic and all the spices and cook 1 minute.
  3. Return the lamb with the black limes, salt, and water. Bring to a boil, cover, and simmer 1 hour until the lamb is tender.
  4. Remove the lamb and strain the broth, skimming off excess fat. Measure out 4 cups of broth.
  5. Drain the soaked rice and add it to the pot with the measured broth. Bring to a boil, then lower the heat, cover, and cook 15 minutes.
  6. Nestle the lamb pieces into the rice, cover, and steam 10 minutes more over the lowest heat.
  7. Rest 10 minutes, then fluff gently and serve the rice with the lamb on top.
