Meat Sambousek

Sambousek is the most popular appetizer of Ramadan in the Gulf, fried fresh every evening and gone within minutes of hitting the table. The crisp pastry triangles hide a filling of spiced minced meat and onion, though cheese and vegetable versions are just as common. Making them at home fills the kitchen with the smells of the holy month, and they are always worth the folding. The fillings change with the cook, but the ritual does not — hundreds are folded in the afternoon and fried as the sun goes down.

The shell is shattering and golden, and the filling inside is juicy and warmly spiced with cumin, coriander, and a hint of cinnamon. They are best eaten hot, with a spoon of yogurt or a squeeze of lemon to balance the richness. Freeze a batch before frying and you will always have them ready for guests — if they last that long. They are equally good baked for a lighter version, though nothing beats the fried shell.

Step by stepInstructions

  1. Knead the flour, water, 3 tbsp oil, and 1 tsp salt into a smooth dough. Cover and rest 30 minutes.
  2. Cook the meat in a skillet, breaking it up, until browned, about 8 minutes. Drain the fat.
  3. Add the onion and garlic and cook 4 minutes until soft, then stir in the cumin, coriander, cinnamon, pepper, and 1 tsp salt. Cook 1 minute, then cool and stir in the cilantro.
  4. Divide the dough into 24 small balls and roll each into a thin 4-inch round.
  5. Place a spoonful of filling on each round, fold into a half-moon, and press the edges with a fork to seal.
  6. Heat 1 inch of oil in a deep skillet to 350°F.
  7. Fry the sambousek in batches until deep golden and crisp, about 3 minutes per side. Drain on paper towels.
  8. Serve hot with yogurt for dipping.

Seal the edges well or the filling escapes into the oil. Filled sambousek freeze beautifully before frying — fry straight from the freezer, adding a minute to the cook time.
