Fairy bread has been delighting Australian children since at least the 1920s, when references to the ‘fairy bread’ of buttered white bread and colourful sugar sprinkles began appearing in local cookbooks and newspapers. It is the non-negotiable centrepiece of every children’s birthday party in the country — served alongside party pies, sausage rolls, and lamingtons — and no plate of triangles looks complete without it.

What makes it great is its sheer, joyful simplicity: soft white bread, a thin layer of butter, and a generous shower of hundreds and thousands that crunch ever so slightly between your teeth. It’s sweet, nostalgic, and completely irresistible to kids and adults alike — proof that you don’t need fancy ingredients to create something magical.

Step by stepInstructions

  1. Spread a thin, even layer of softened butter over one side of each bread slice, right to the edges.
  2. Pour the hundreds and thousands onto a flat plate in an even layer.
  3. Press each buttered slice, butter-side down, into the sprinkles so they stick generously across the whole surface.
  4. Cut each slice into four triangles and arrange them on a serving plate, sprinkle-side up, with the crusts still on — that's the traditional way.

💡 Chef tips & storage

Use good-quality soft white bread and real butter, and spread it thinly but completely — the sprinkles need the butter to grip. Don't be tempted to cut the crusts off; the crusts are part of the fairy bread experience.
