Step by stepInstructions

  1. Preheat the oven to 425°F. Make small incisions all over the lamb and push in the garlic slivers, then rub with oil, rosemary, salt, and pepper.
  2. Place the lamb in a roasting pan and roast for 20 minutes, then reduce the heat to 375°F.
  3. Toss the potatoes, pumpkin, and carrots in a little oil and salt, and add them to the pan around the lamb.
  4. Roast for a further 50 to 60 minutes, basting occasionally, until the lamb reaches 130°F to 135°F at the centre for medium-rare; remove the lamb and rest it, covered, for 20 minutes.
  5. Turn the vegetables once and continue roasting while the lamb rests.
  6. For the gravy, set the pan over medium heat, stir the flour into the pan juices, then whisk in the stock and simmer until thickened; season to taste.
  7. Carve the rested lamb and serve with the roast vegetables, gravy, and mint sauce.
