Fish and chips arrived in Australia with British settlers in the 19th century, but it was the wave of European migration after World War II that turned it into a national institution, as fish shops opened on every corner of every seaside suburb. Ordering ‘flakes’ — the classic gummy shark — or barramundi, wrapped in paper with hot chips, and eating it on the beach within minutes became one of Australia’s most cherished rituals, complete with the seagulls circling hopefully overhead.

What makes it great is the glorious simplicity of really good frying: crisp, light, golden batter that shatters around sweet, flaky white fish, and fat, floury chips that are crunchy outside and fluffy inside. Splashed with vinegar, shaken with salt, and squeezed with lemon while still hot enough to burn your fingers, it’s the taste of the ocean, the esplanade, and every childhood summer.

Step by stepInstructions

  1. Soak the cut chips in cold water for 30 minutes, then drain and dry thoroughly with a clean tea towel.
  2. Heat the oil in a deep pot to 325°F and fry the chips in batches for 4 to 5 minutes, until soft but not coloured; drain and set aside.
  3. Whisk the flour, baking powder, and salt with the ice-cold sparkling water to a smooth batter the consistency of thin cream, and keep it cold.
  4. Raise the oil to 375°F and fry the chips a second time for 2 to 3 minutes, until golden and crisp; drain, salt generously, and keep warm.
  5. Dust the fish fillets in extra flour, dip each into the batter, and lower carefully into the hot oil.
  6. Fry in batches for 4 to 5 minutes, turning once, until deep golden and cooked through; drain on paper towels.
  7. Serve immediately, wrapped in paper, with the chips, lemon wedges, salt, and vinegar.

💡 Chef tips & storage

The batter must be ice-cold and the oil at the right temperature or it will absorb fat and go heavy — a thermometer is your friend. Classic Australian finishes: chicken salt on the chips and a good squeeze of lemon over the fish.
