The dagwood dog is Australia’s answer to the corn dog: a saveloy threaded onto a wooden stick, coated in a thick golden batter, and deep-fried until it puffs into a crisp, craggy shell. It became a staple of school fetes, agricultural shows, and seaside kiosks from the 1950s onwards, sold in paper bags with a squirt of tomato sauce, and its name — borrowed from the American comic-strip character Dagwood Bumstead — has stuck for generations.

What makes it great is its gloriously simple, carnival-pleasing appeal: the batter puffs up crisp and golden around a juicy, smoky saveloy that pops when you bite through the casing. Eaten straight off the stick, it’s sweet, salty, and satisfying in a way that instantly transports you back to a summer showground — messy hands guaranteed.

Step by stepInstructions

  1. Dry the saveloys with paper towels and thread each one onto a skewer, pushing it almost to the end.
  2. Whisk the flours, salt, water, and egg into a smooth, thick batter the consistency of cream; keep it cold.
  3. Heat the oil in a deep pot to 350°F.
  4. Holding the skewer, dip each saveloy into the batter, turning to coat completely and letting the excess drip off.
  5. Lower gently into the hot oil and fry for 3 to 4 minutes, turning once or twice, until puffed, golden, and crisp.
  6. Drain on paper towels and serve immediately, still on the stick, with tomato sauce.

💡 Chef tips & storage

Pat the saveloys bone-dry before dipping, or the batter will slide off. If the batter feels thin, add a little more flour — it should cling thickly enough to puff into that craggy, golden shell.
