Classic New Zealand Meat Pie

The meat pie has been New Zealand’s unofficial national dish since the early 1900s, when British settlers brought their pie-making traditions south. Today it’s sold from every corner dairy, bakery, and petrol station, always waiting in a heated pie warmer, and it’s the food of choice at school lunchtimes and rugby clubrooms across the country.

What makes a great Kiwi pie is the balance of filling and pastry: deeply browned beef mince in a glossy, peppery gravy that’s thick enough not to run, wrapped in buttery shortcrust with a puff pastry lid. Eat it straight from the paper bag with a squirt of tomato sauce — that’s the only way.

  1. Heat the oil in a large frying pan over medium heat and cook the onion and garlic until soft.
  2. Add the beef and cook, breaking it up, until well browned.
  3. Stir in the flour, then the stock, tomato paste, and Worcestershire sauce. Simmer for 10 minutes until thick, season, and cool completely.
  4. Preheat the oven to 400°F. Line a pie dish with shortcrust pastry and fill with the cold mince.
  5. Top with puff pastry, crimp the edges, cut a steam vent, and brush with beaten egg.
  6. Bake for 30–35 minutes until golden. Rest for 5 minutes before serving.

A cold filling is the secret to a crisp bottom crust — never pour hot mince into pastry. For extra shine, brush the top with egg glaze again halfway through baking.
