Pancit is the noodle dish of every Filipino celebration, and pancit canton — with its springy egg noodles — is the version that shows up at birthdays, fiestas, and family reunions. Long noodles mean long life, so the platter is never cut, only twirled onto plates. Cooked in one big wok with meat, shrimp, and a tangle of vegetables, it is also the dish that feeds a whole barangay — one generous platter stretches to feed every cousin, neighbor, and guest who walks in.

The noodles soak up a glossy sauce of soy and oyster, turning savory and satisfying, while cabbage stays crunchy and shrimp turn plump and sweet. A squeeze of calamansi over the top brightens everything with a citrus pop that cuts the richness. The citrus is non-negotiable — without it the noodles are just good, and with it they are pancit, the taste of every celebration you have ever been to.

Step by stepInstructions

  1. Cook the noodles according to the package directions until just tender, then drain and rinse with cold water. Set aside.
  2. Heat half the oil in a large wok or skillet over high heat. Add the pork and chicken and stir-fry until golden and cooked through, about 4 minutes. Remove to a plate.
  3. Add the remaining oil and stir-fry the shrimp until pink, about 2 minutes. Remove with the meat.
  4. Add the onion and garlic and cook for 1 minute, then add the cabbage, carrots, and snow peas and stir-fry for 2 minutes, keeping the vegetables crisp.
  5. Return the meat and shrimp to the wok, add the noodles, soy sauce, oyster sauce, and chicken broth, and toss everything for 2 to 3 minutes until the noodles are coated and steaming.
  6. Transfer to a large platter and serve hot with calamansi wedges on the side.

Do not overcook the noodles — they should keep a bit of chew. Squeeze calamansi or lemon over each plate right before eating; that bright pop is what makes pancit sing.
