Poke began in old Hawaii as a fisherman’s snack: freshly caught reef fish seasoned with sea salt, seaweed and crushed kukui nut. Today’s shoyu-style poke, dressed with soy sauce, sesame oil and green onion, was perfected in Honolulu and has become Hawaii’s most famous food export.

Good poke is all about contrast — buttery raw tuna, salty-sweet shoyu, nutty sesame and crisp onion. Serve it over hot rice with avocado for the full island experience.

Step by stepInstructions

  1. Pat the tuna cubes dry with paper towels and place in a bowl.
  2. Whisk the soy sauce, sesame oil, sugar and ginger (if using) in a small bowl.
  3. Pour the dressing over the tuna and toss gently.
  4. Add the green onions, sweet onion and sesame seeds; toss once more.
  5. Serve immediately over hot rice with avocado, or chill briefly for a firmer texture.

💡 Chef tips & storage

Use the freshest sashimi-grade fish you can find, and keep the cubes large — poke should be chunky, not minced. Season gently at first; you can always add more shoyu.
