Born in St. Louis’s Italian neighborhood, toasted ravioli is breaded, fried pasta pockets — crunchy outside, molten cheese inside.

Step by stepInstructions

  1. Thaw the ravioli slightly, then pat dry.
  2. Whisk the eggs and milk in one dish; mix the breadcrumbs, Parmesan, garlic powder, and salt in another.
  3. Dredge each ravioli in the egg, then press into the breadcrumbs, coating completely.
  4. Heat 2 inches of oil to 350°F and fry the ravioli in batches 2-3 minutes, turning once, until golden and crisp.
  5. Drain on paper towels and serve hot with warm marinara, extra Parmesan, and basil.

💡 Chef tips & storage

Freeze the breaded ravioli for 15 minutes before frying so the coating stays put. Serve immediately — they're best while the cheese is molten.
