Fijian Fish in Coconut Milk (Ika Vakalolo)

Known as ika vakalolo in iTaukei, this gentle fish stew is one of the oldest recipes in the Fijian kitchen, made simply with the ingredients that have always been at hand: fresh reef fish, coconut milk, and lime. It is the dish grandmothers cook for children and the first thing served to guests in many coastal villages.

What makes it great: where a curry demands a spice rack, this stew needs almost nothing — just patient simmering until the coconut milk thickens and clings to the fish. The result is sweet, clean, and comforting, best eaten with taro, cassava, or a bowl of steamed rice.

Step by stepInstructions

  1. Place the coconut milk, onion, ginger, garlic, chili, and half the green onions in a wide pot and bring to a gentle simmer over medium-low heat.
  2. Season the fish fillets with salt and pepper and lay them in the coconut milk in a single layer.
  3. Simmer gently for 10-12 minutes, spooning the coconut milk over the fish, until the fish flakes easily.
  4. Stir in the citrus juice and the remaining green onions, taste for salt, and serve immediately with taro or rice.

💡 Chef tips & storage

Keep the heat low — boiling coconut milk too hard can cause it to separate. This stew is traditionally eaten the same day it is made, when the coconut is freshest.
