A traditional Jamaican dish — Meat Loaf gets an island makeover with thyme, scallion and a whisper of scotch bonnet folded into the ground beef. A sweet ketchup glaze, the Jamaican way, seals in the moisture as it bakes. It is homey, hearty and beloved at Sunday suppers, served with rice and peas or mashed ground provisions.

Step by stepInstructions

  1. Heat the oven to 350°F (175°C) and lightly oil a loaf pan.
  2. Combine the ground beef, breadcrumbs, egg, onion, scallions, garlic, thyme, scotch bonnet, carrot, Worcestershire, salt and pepper in a large bowl.
  3. Mix with your hands until just combined — do not overwork the meat.
  4. Press the mixture into the loaf pan and spread the ketchup over the top in an even glaze.
  5. Bake for 55 to 65 minutes, until the loaf is firm and the center registers 160°F (70°C).
  6. Rest for 10 minutes before slicing, then serve with rice and peas, callaloo or fried plantain.

💡 Chef tips & storage

The grated carrot keeps the loaf moist without diluting the flavor. Let the loaf rest before slicing, or it will crumble.
