Island-Style Grilled Fish

Grilling fish over an open fire is perhaps the most ancient cooking method in Fiji, and every village knows the ritual: the morning’s catch scaled and cleaned, rubbed with lime and sea salt, and laid across a wire rack or woven coconut fronds over glowing coals. In the islands it is usually cooked by the sea, with the fish eaten straight from the fire.

What makes it great: the smoke and char transform even a simple fish into something extraordinary, crisping the skin while keeping the flesh moist and sweet. A dip of chili, soy, and lime makes it addictive, and it pairs perfectly with taro, cassava, and a heap of fresh island salad.

Step by stepInstructions

  1. Pat the fish dry and score the skin in 3-4 diagonal slashes on each side.
  2. Mix the lime juice, oil, garlic, ginger, salt, and pepper and rub the mixture all over the fish, working it into the slashes; stuff the cavity with herbs.
  3. Preheat a grill or prepare a charcoal fire to medium-high heat.
  4. Oil the grill grate well and grill the fish for 6-8 minutes per side, turning once, until the skin is charred and the flesh flakes at the thickest part.
  5. Whisk the soy sauce with extra lime juice and chopped chili for a dipping sauce.
  6. Serve the fish whole with the dipping sauce, rice, and salad.

💡 Chef tips & storage

Don't rush the fish — resist flipping it more than once so the skin stays intact. If the fish is large, move it to the cooler side of the grill to finish cooking through.
