Souvlaki means “skewer” — chunks of pork or chicken marinated in olive oil, lemon, garlic, and oregano, then grilled over high heat until charred at the edges and juicy within. It is Greece’s most loved street food.

Serve souvlaki off the skewer with pita, tzatziki, tomato, and onion, or over rice with a Greek salad. The marinade is the soul of the dish, so give the meat time to soak it all in.

  1. Whisk the olive oil, lemon juice, garlic, oregano, salt, and pepper; toss with the meat and marinate 2-4 hours, or overnight.
  2. Thread the meat onto the skewers, packing the pieces snugly.
  3. Preheat a grill or grill pan over high heat.
  4. Grill 8-10 minutes, turning every 2 minutes, until charred and cooked through.
  5. Rest 5 minutes. Serve with warm pita, tzatziki, tomato, and onion.

💡 Chef tips & storage

Don't move the skewers too often — let a crust form. Wooden skewers soaked in water prevent burning; metal ones work even better.
