Roti came to Fiji with Indian indentured laborers in the 1870s and has since become a beloved staple across the entire country. Fijian roti is famous for being exceptionally soft and flaky, and no curry dinner feels complete without a warm stack on the table.
What makes it great: made from just flour, water, and a little oil, it seems almost too simple — until you tear into a piece and watch it steam, flaky and tender. It is the perfect vehicle for curry, and making it from scratch is a skill every Fijian cook is proud of.
