Fijian-Style Roti

Roti came to Fiji with Indian indentured laborers in the 1870s and has since become a beloved staple across the entire country. Fijian roti is famous for being exceptionally soft and flaky, and no curry dinner feels complete without a warm stack on the table.

What makes it great: made from just flour, water, and a little oil, it seems almost too simple — until you tear into a piece and watch it steam, flaky and tender. It is the perfect vehicle for curry, and making it from scratch is a skill every Fijian cook is proud of.

Step by stepInstructions

  1. Mix the flour, salt, and sugar in a large bowl, then add the warm water and 2 tbsp of the oil.
  2. Knead for 8-10 minutes into a smooth, soft dough; cover and rest for 30 minutes.
  3. Divide the dough into 8 balls, then roll each ball into a thin round about 8 inches across.
  4. Heat a griddle or heavy skillet over medium-high heat and cook each roti for about 1 minute per side, until golden spots appear.
  5. As each roti finishes, brush it lightly with oil, then stack and cover with a clean cloth to keep soft.

💡 Chef tips & storage

Resting the dough is essential for soft roti — don't skip it. Keep the cooked roti covered so they stay pliable until serving.
