Chop suey arrived in Tonga with Chinese traders in the early 1900s and became one of the islands’ most-loved takeaway dishes. Tongan cooks adapted it with local cabbage, carrots, and whatever meat was on hand, finishing it with a splash of soy sauce and a hint of sweetness. Today every town has a shop selling it in a paper tray, and it is the default order when nobody can agree on dinner.

What makes it great: the satisfying mix of textures — chewy noodles, crunchy vegetables, tender meat — all bound together in a salty-sweet sauce that clings to every strand. It is fast, cheap, and deeply satisfying, the kind of dish that tastes like a celebration even on a Tuesday.

  1. Cook the noodles according to the package directions, drain, and set aside.
  2. Heat the oil in a wok or large skillet over high heat and stir-fry the pork until browned, about 4 minutes.
  3. Add the onion and garlic and cook for 1 minute, then add the cabbage and carrots and stir-fry until just tender, about 4 minutes.
  4. Add the soy sauce, oyster sauce, sugar, and chicken stock, and bring to a bubble.
  5. Add the cooked noodles and toss everything together until the noodles are coated and hot, about 2 minutes.
  6. Serve hot, straight from the wok.
