Cevapi are small, skinless sausages of minced beef and lamb, seasoned simply and grilled until charred and juicy. The magic is in the handling — a light touch, a quick rest, and a very hot grill.

These little sausages are the heart of any Balkan grill session, traditionally served with somun flatbread, chopped raw onion, and a generous scoop of ajvar or kajmak. Eat them right off the grill.

Step by stepInstructions

  1. In a bowl, combine the beef, lamb, garlic, salt, pepper, paprika, and sparkling water. Mix gently until just combined.
  2. Cover and refrigerate for at least 30 minutes, or overnight, so the flavors meld.
  3. Shape the mixture into 24 short, thick sausage links, about 3 inches long.
  4. Grill over medium-high heat, turning often, for 10-12 minutes, until charred and cooked through.
  5. Serve immediately with chopped onion, flatbread, and ajvar.

💡 Chef tips & storage

Chilling the shaped cevapi for 30 minutes helps them hold together on the grill. Mix the meat gently — overworking makes them dense.
