Teriyaki beef came to Hawaii with Japanese immigrants and found a second home in the drive-in plate lunch, where a scoop of rice, a scoop of mac salad, and a pile of glossy teriyaki beef became the standard order. Local versions lean sweeter and richer than their Japanese counterparts, using more shoyu and sugar.

What makes it great is the fast sear over high heat, which leaves the beef juicy inside with caramelized, candied edges. It is quick enough for a weekday and satisfying enough to anchor an entire plate.

Step by stepInstructions

  1. In a bowl, whisk the soy sauce, brown sugar, mirin, water, garlic, and ginger to make the marinade.
  2. Toss the beef in half the marinade and let sit 15 to 20 minutes at room temperature.
  3. Heat the oil in a large skillet or wok over high heat until shimmering. Working in batches, sear the beef for 1 to 2 minutes per side until browned but still tender.
  4. Pour the remaining marinade into the skillet and cook, tossing, until it thickens into a glossy glaze, about 1 minute.
  5. Garnish with green onions and serve over steamed rice.

💡 Chef tips & storage

Slice the beef very thin, a partially frozen steak is much easier to slice. Do not crowd the pan, or the beef will steam instead of caramelize.
