Butter mochi is a Hawaii potluck legend, born from Japanese mochi-making traditions and transformed with butter, coconut milk, and a hot oven. Unlike traditional pounded mochi, it is baked into a golden pan of chewy, custard-like squares that everyone fights over.

What makes it great is its unique texture, crisp edges, a dense, stretchy middle, and a sweet coconut flavor that pairs perfectly with coffee. It is nearly impossible to eat just one.

Step by stepInstructions

  1. Preheat the oven to 350 degrees F and grease a 9x13-inch baking pan.
  2. In a large bowl, whisk the mochiko, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then whisk in the coconut milk, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry and whisk until smooth, with no lumps.
  5. Pour the batter into the pan and bake for 60 to 70 minutes, until deep golden brown and set in the center.
  6. Cool completely before cutting into squares.

💡 Chef tips & storage

The top should be deeply browned and slightly crackly while the inside stays soft. Cool completely, mochi cuts cleanly only when fully set.
