Kulolo is a taro lover’s dream: grated taro is mixed with coconut cream and sugar, then baked low and slow until it firms into a dense, caramel-sweet block with a sticky top. It is a specialty of Tongan and Polynesian kitchens, often made in big pans to share at feasts and fundraisers, then cut into neat squares for the crowd.

What makes it great: deeply sweet with a chewy, satisfying texture and caramelized edges that are the best part of all. A small slice goes a long way, and it keeps for days — if it lasts that long.

  1. Preheat the oven to 325°F and line an 8-by-8-inch baking pan with banana leaves or butter it well.
  2. In a large bowl, combine the grated taro, coconut cream, brown sugar, salt, and vanilla, and stir until well mixed.
  3. Pour the mixture into the prepared pan and smooth the top.
  4. Bake for 1 1/2 to 2 hours, until set and deep golden brown on top and the edges are sticky and caramelized.
  5. Let cool completely in the pan before cutting into squares.
  6. Serve at room temperature; leftovers keep well for several days.

Grate the taro as finely as you can — coarse gratings make the pudding crumbly instead of dense. The top will darken as it caramelizes; that is the best part, so do not worry if it looks very brown.
