Coconut Shrimp

Coconut shrimp is the Pacific’s answer to the perfect party bite: plump shrimp dipped in batter, rolled in shredded coconut and fried until the crust turns golden and shattery. It is the appetizer at luaus, beachside bars and family celebrations across the islands.

The sweet coconut crust against juicy, briny shrimp is a pairing made in paradise. Serve it with a tangy lime-mayo or sweet chilli dip and watch it disappear.

  1. Pat the shrimp dry and season lightly with salt and pepper.
  2. Set up three shallow bowls: flour with salt and pepper; eggs whisked with coconut milk; and shredded coconut.
  3. Dredge each shrimp in the flour, dip in the egg mixture, then press into the coconut to coat evenly.
  4. Heat the oil in a deep pot to 350°F. Fry the shrimp in batches for 2-3 minutes, until golden and cooked through.
  5. Drain on paper towels and serve immediately with lime wedges and sweet chilli sauce.

Keep the oil at a steady 350°F so the coconut browns without burning. Fry in small batches so the shrimp cook evenly and stay crisp.
