Tequeños are Venezuela’s most beloved finger food: sticks of firm white cheese wrapped in a buttery, slightly sweet dough and fried until golden. They show up at every gathering, from birthdays to Christmas Eve, and are almost always gone before the meal begins.

The outside shatters with a delicate crunch, giving way to soft, stretchy cheese that pulls in long ribbons. The subtle sweetness of the dough balances the salty cheese perfectly — one is never enough.

Step by stepInstructions

  1. Mix the flour, salt, and sugar, rub in the butter until crumbly, then add the egg and warm water and knead into a smooth, soft dough.
  2. Cover and rest the dough 30 minutes so it relaxes and rolls easily.
  3. Roll the dough out thinly (about 1/8 inch) and cut it into long strips about 1 inch wide.
  4. Wrap each cheese stick in a strip, slightly overlapping, and pinch the ends to seal completely.
  5. Fry the tequeños in 350°F oil for 2 to 3 minutes, turning, until deep golden all over; drain on paper towels.
  6. Serve hot, while the cheese is still melty in the middle.

💡 Chef tips & storage

Freeze the wrapped tequeños for 30 minutes before frying so the cheese stays put, and use a firm cheese so it melts slowly. Uncooked tequeños freeze for up to 3 months — fry them straight from frozen.
