Kitfo comes from the Gurage region and is Ethiopia’s most daring delicacy: fresh beef minced fine, warmed gently in spiced niter kibbeh, and tossed with mitmita, a searing chili-and-cardamom spice blend. It is served nearly raw — the way the Gurage people have enjoyed it for generations — and it is a dish of ceremony, served at holidays and celebrations, eaten with ayib cheese, gomen, and plenty of injera.

Silky raw beef, warm butter, a serious kick

Done right, kitfo is silky and rich, the warmth of the spiced butter barely cooking the surface while the center stays cool and tender. Mitmita brings serious heat and a citrusy cardamom fragrance that cuts through the butter’s richness, and the cool, crumbly ayib is the perfect landing pad. If raw beef is not for you, cook it through — kitfo leb leb — and you will still taste why this dish has traveled from the Gurage highlands to restaurants around the world. Step by stepInstructions

  1. Trim all silver skin from the beef and cut it into 1-inch chunks; freeze for 30 minutes.
  2. Pulse the beef in a food processor in batches until finely minced, stopping before it turns to paste.
  3. Melt the niter kibbeh in a small skillet over low heat; stir in the mitmita, cardamom, and salt and warm 1-2 minutes without boiling.
  4. Pour the warm spiced butter over the minced beef and stir until well combined.
  5. For kitfo leb leb, return the mixture to the skillet and cook, stirring, until just warm and barely cooked, 2-3 minutes.
  6. Mound the kitfo on a platter and serve with ayib, gomen, awaze, and injera.
  7. Let everyone scoop it up with torn pieces of injera.

💡 Chef tips & storage

Buy the freshest top round or sirloin and freeze it for 30 minutes before mincing — a chilled blade makes the cleanest cut. If raw meat is not your thing, cook it through for kitfo leb leb.
