  1. Heat the niter kibbeh in a large skillet over medium-high heat.
  2. Add the onions and cook, stirring, until golden and soft, about 8 minutes.
  3. Add the garlic, ginger, berbere, and salt and cook 1 minute until fragrant.
  4. Add the chicken skin-side down and brown 4-5 minutes per side.
  5. Add the tomato and broth, bring to a simmer, cover, and cook until the chicken is cooked through and tender, 20-25 minutes.
  6. Uncover and cook until the sauce clings to the chicken, about 5 minutes.
  7. Stir in the lemon juice and serve hot with injera.
