Either way, it is the deep-green presence on nearly every platter, rolled up in injera or piled beside a fiery wat.

Long, gentle cooking transforms the sturdy leaves into ribbons that melt in your mouth, carrying the mellow heat of ginger and a garlicky richness from the spiced butter. The berbere is optional but traditional — just enough to warm the greens without turning them red. Serve gomen alongside doro wat or kitfo, where it acts as the calm, earthy counterpoint, and do not be surprised when it disappears before the stews do.

Step by stepInstructions

  1. Bring a large pot of salted water to a boil and blanch the collard ribbons for 2 minutes; drain well.
  2. Heat the niter kibbeh in a large skillet over medium heat and cook the onion until soft and golden, about 6 minutes.
  3. Add the garlic, ginger, berbere, salt, and pepper and cook 1 minute until fragrant.
  4. Add the collards and water and cook, stirring, until the greens are very tender, 15-20 minutes.
  5. Simmer uncovered until most of the liquid is gone and the greens are glossy, about 5 minutes more.
  6. Taste for salt and serve warm.

💡 Chef tips & storage

Blanching the collards first keeps them bright and cuts the cooking time. For the classic beef version, brown a little chopped beef in the pan before the onion.
