Kelewele is the snack that fills Ghana’s evenings, when vendors light their charcoal stoves and the smell of spiced, sizzling plantains drifts through the streets. Ripe plantains are tossed with ginger, garlic, and hot pepper, then fried until the edges turn sticky and caramelized. It is sold in paper cones on every corner and made at home for the simple pleasure of it. Locals pair it with roasted peanuts and a cold drink at the end of the day, and first-time visitors quickly learn to order two bags.

Caramel edges with a peppery bite

The sweetness of very ripe plantains meets the sharp heat of cayenne, and the two argue happily in every bite while ginger and garlic add warmth underneath. The edges turn deep amber and lightly crisp while the centers stay soft and tender. Eat kelewele hot, straight from the pan, maybe with a scatter of roasted peanuts and a few onion rings for crunch. Some cooks add a little grated nutmeg or extra salt to the marinade, but the classic formula stays ginger, garlic, and heat.

Step by stepInstructions

  1. In a bowl, mash the ginger, garlic, cayenne, nutmeg, and salt with the water to make a rough paste.
  2. Add the plantain chunks and toss until every piece is coated. Let them sit for 5 minutes.
  3. Heat the oil in a large skillet over medium-high heat.
  4. Add the plantains in a single layer and fry for 3 to 4 minutes per side, until deeply golden and caramelized at the edges.
  5. Drain on paper towels and season with a little extra salt.
  6. Serve hot, scattered with peanuts and onion rings.

💡 Chef tips & storage

Use fully ripe plantains with black-flecked skins — that's where the sweetness lives. Fry in a single layer so they caramelize instead of steaming.
