Moi moi is the steamed bean pudding that anchors every Nigerian celebration, from weddings to Christmas mornings. Black-eyed peas are peeled, blended silky-smooth, and steamed in parcels of banana leaf or foil until they set into a firm, custardy pudding. It is served alongside jollof rice and fried plantain, or sliced on its own, and it is the dish people request by name when they are coming to dinner.

Custardy, savory, and sliceable

The texture is the whole point: smooth and dense, almost like a savory flan, with a slice of hard-boiled egg and flakes of smoked fish hidden in the center like a treasure. Crayfish and bouillon give it a deep, briny savor that works at breakfast, lunch, or party time. Unwrapping a warm parcel of moi moi is one of the great small pleasures of Nigerian cooking — the parcel opens to release a puff of steam and the aroma of beans and palm oil.

Step by stepInstructions

  1. Soak the black-eyed peas in plenty of water overnight, then rub the skins off between your palms and rinse well.
  2. Blend the peeled beans with the bell pepper, scotch bonnet, onion, and the water until smooth, adding a little more water if needed to make a thick, pourable batter.
  3. Stir in the palm oil, crayfish, bouillon, and salt.
  4. Cut banana leaves or foil into 8-by-8-inch squares. Spoon the batter into the center of each, filling it three-quarters full.
  5. Press a slice of egg and some smoked fish into the middle of each portion, then fold and secure the wrappers into parcels.
  6. Arrange the parcels in a steamer or a pot with an inch of simmering water, seam side up.
  7. Steam over medium heat for 1 hour, adding water as needed, until a knife inserted in the center comes out clean.
  8. Let the parcels rest for 10 minutes before unwrapping and serving warm.

💡 Chef tips & storage

Peeling the beans is the step that separates silky moi moi from gritty — soak them until the skins rub right off. Don't fill the wrappers more than three-quarters full; the pudding rises as it steams.
