California grilled corn salad is summer on a platter — charred corn cut off the cob and tossed with cherry tomatoes, avocado, red onion, and basil in a lime vinaigrette. It’s the side dish that steals the show at every barbecue.

Summer on a platter

Charred corn, cherry tomatoes, avocado, and basil in a lime vinaigrette — the fresh California corn salad.

Step by stepInstructions

  1. Brush the corn with 1 tbsp oil and grill over medium-high heat, turning, until charred, about 8-10 minutes.
  2. Cut the corn from the cobs into a large bowl.
  3. Add the tomatoes, avocado, red onion, and basil.
  4. Whisk the lime juice, 3 tbsp oil, salt, pepper, and paprika and pour over the salad. Toss gently.
  5. Serve at room temperature.

💡 Chef tips & storage

Char the corn well — the smoky flavor is the point. Fold in the avocado last so it stays chunky and green.
