Step by stepInstructions

  1. Simmer the beef in 2 cups of the stock with a pinch of salt until tender, about 30 minutes. Add the smoked mackerel for the last 10 minutes.
  2. Heat the palm oil in a large pot over medium heat. Cook the onions and scotch bonnet peppers until soft, about 5 minutes.
  3. Add the chopped okra and cook, stirring gently, for 5 minutes, until it begins to release its slipperiness.
  4. Pour in the remaining 2 cups of stock and the beef with its cooking liquid. Add the crayfish and bouillon and simmer for 10 minutes.
  5. Stir in the spinach and cook for 2 to 3 minutes, just until wilted.
  6. Taste and adjust the salt. The soup should be thick, glossy, and silky, with a gentle stretch when you lift the spoon.
  7. Serve hot with fufu, pounded yam, or rice.
