Guiso de Lentejas

Guiso de lentejas is the ultimate budget-friendly comfort stew, the kind of dish abuelas make without measuring. Lentils simmer with chorizo, bacon, and vegetables until everything is thick, smoky, and deeply savory.

The abuela-approved winter warmer

The lentils turn creamy while the chorizo and bacon infuse the whole pot with smoke, and the potatoes soak up all that rich, paprika-tinted broth. It is rustic, hearty, and gets better the next day.

Step by stepInstructions

  1. Heat the oil in a large pot and render the bacon for 5 minutes, then add the beef cubes and brown them for 6 minutes.
  2. Add the chorizo slices and cook for 3 minutes, until the fat starts to color them.
  3. Stir in the onion and garlic and cook for 4 minutes, then add the tomatoes, paprika, and cumin and cook 2 minutes more.
  4. Pour in the stock with the bay leaf, add the lentils, and bring to a boil; reduce to a simmer and cook for 30 minutes.
  5. Add the potatoes and carrots and simmer for another 30 to 40 minutes, until the lentils are tender and the stew is thick.
  6. Season with the salt and pepper, remove the bay leaf, and let it sit for 10 minutes before serving.

💡 Chef tips & storage

This stew loves a leftover: any roast meat can stand in for the beef. It keeps 4 days refrigerated and 3 months frozen, and thickens overnight — thin it with stock when reheating.
