  1. Rinse the rice until the water runs clear and drain well.
  2. In a medium pot, combine the rice, coconut milk, water, salt, cardamom, cinnamon, and bay leaf.
  3. Bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes without lifting the lid.
  4. Turn off the heat and let the rice steam, covered, for 10 minutes.
  5. Remove the whole spices, add the butter if using, and fluff gently with a fork.
