Viazi karai are Zanzibar’s answer to the perfect fried snack, slices of potato dipped in spiced chickpea batter and fried until the coating crackles. They are sold warm in paper cones at markets and beach stalls across the island, carried off to be eaten with tangy chili sauce. Indian traders brought the technique, and Zanzibar made it its own. They are proof that a good idea travels well.

The chickpea batter turns a deep gold and shatters at the first bite, giving way to soft, steamy potato within.
