  2. Mix the five-spice, salt, white pepper, and sugar; rub over the meat sides only. Rub the wine over the meat, too.
  3. Rub the vinegar (and baking soda, if using) over the skin. Refrigerate the belly uncovered on a rack overnight, so the skin dries completely.
  4. Preheat the oven to 400°F. Wrap the meat sides in foil, leaving the skin exposed. Roast for 45 minutes.
  5. Remove the foil, raise the heat to 450°F, and roast 15 to 20 minutes more, until the skin blisters into crackling.
  6. Rest 10 minutes, then slice skin-side down. Serve with mustard or hoisin.
