Yakitori (grilled chicken skewers) with tare glaze

Yakitori started at tiny lantern-lit stalls in postwar Tokyo, where skewers of chicken were grilled over charcoal and basted with a sweet-soy tare until lacquered. The word means grilled bird, and the ritual is simple: skewer, grill, glaze, eat. At home, a hot skillet or grill pan stands in for the charcoal, and the smell alone will draw everyone into the kitchen. It is the kind of food that makes people gather around a table and linger.

Charcoal smoke and a glossy soy glaze

Proper yakitori is juicy and lightly charred, with caramelized edges, tender scallion centers, and a tare that is salty, sweet, and deeply savory. Each skewer is small enough to keep reaching for, which is exactly the point. Brush on several thin coats of glaze rather than one heavy one for that restaurant shine, crisp the skin first for the best texture, and serve with shichimi togarashi for a gentle heat.

Step by stepInstructions

  1. Simmer the soy sauce, mirin, sake, and sugar in a small saucepan for 10 minutes until slightly thickened. Set aside half for basting and half for serving.
  2. Cut the chicken into 1-inch pieces and the scallion whites into 1-inch lengths.
  3. Thread the chicken and scallions onto skewers, alternating, with 4 to 5 pieces per skewer.
  4. Heat a grill, grill pan, or broiler to medium-high and oil the grates.
  5. Cook the skewers for 2 to 3 minutes per side, turning often, until the chicken is charred at the edges and cooked through.
  6. Brush each skewer with the basting sauce in the final minute of cooking, turning to glaze all sides.
  7. Serve immediately with the reserved sauce, shichimi togarashi, and lemon wedges if you like.

💡 Chef tips & storage

Soak bamboo skewers in water for 30 minutes before grilling so they do not burn. Brush the glaze only at the end so the sugar does not scorch.
