Japanese Potato Salad with cucumber, ham and egg

Japanese potato salad is a yoshoku classic that found its way into bento boxes, birthday tables, and convenience stores across the country. What sets it apart is the slightly mashed, creamy texture, the bright tang of rice vinegar and Japanese mayonnaise, and the crisp pops of cucumber and carrot folded through the soft potatoes. It is the side dish that shows up everywhere, every family has strong opinions about the right proportions, and it is comfort food that travels well, which may be its greatest gift.

Soft, creamy, and impossibly comforting

The potatoes are velvety and buttery, the cucumber slices stay crisp and refreshing, and the ham and hard-boiled egg make it substantial enough to stand alone. Japanese mayonnaise brings a gentle sweetness and a deeper tang than its American cousin, and a whisper of mustard keeps it interesting. Squeeze the water from the cucumber, mash the potatoes just until creamy with a few lumps left for texture, and chill it well before serving.

Step by stepInstructions

  1. Put the potato chunks in a pot, cover with cold water, add a pinch of salt, and boil until easily pierced with a knife, about 15 minutes.
  2. Meanwhile, toss the cucumber slices with the salt and let sit for 10 minutes, then squeeze out the excess water.
  3. Boil the carrot slices for 2 minutes, then drain and cool.
  4. Drain the potatoes and mash them coarsely while still warm, leaving some lumps.
  5. Stir in the rice vinegar, sugar, mustard, and pepper, then fold in the cucumber, carrot, ham, and eggs.
  6. Add the mayonnaise and the grated onion, if using, and fold gently until creamy.
  7. Chill for at least 30 minutes before serving.

💡 Chef tips & storage

Squeeze the cucumber very dry or the salad turns watery by dinnertime. Taste before adding salt — Japanese mayonnaise is already salty and the ham adds more.
