Satay crossed the sea from Indonesia and Malaysia, but Thailand adopted it so completely that it now feels as Thai as pad thai. Vendors grill the skewers over charcoal, basting them with coconut milk until the edges char and caramelize, and they are a staple at parties and night markets alike. The peanut sauce is the real star — rich, nutty, and laced with red curry paste.

Charred at the edges, tender in the middle

The marinade of coconut milk, turmeric, and lemongrass keeps the chicken juicy and gives it a golden glow, while the grill adds a smoky char that no oven can quite match. The sauce is thick enough to cling, sweet and salty with a warm finish of curry and tamarind. Serve them with cucumber relish for that classic street-stall spread, or cook them on a grill pan when charcoal is not an option.

Step by stepInstructions

  1. Whisk the coconut milk, fish sauce, curry powder, turmeric, palm sugar, and lemongrass in a bowl.
  2. Add the chicken strips and toss to coat. Cover and marinate in the fridge for at least 1 hour, or overnight.
  3. Meanwhile, make the sauce: blend the peanuts with 3/4 cup coconut milk, the red curry paste, tamarind paste, and 1 tablespoon of water until smooth. Simmer gently for 5 minutes until thick.
  4. Thread the chicken onto the soaked skewers, weaving the strips so they lie flat.
  5. Grill over medium-high heat for 4 to 5 minutes per side, basting with the leftover marinade, until charred at the edges and cooked through.
  6. Serve hot with the peanut sauce for dipping.

💡 Chef tips & storage

Soak wooden skewers in water for 30 minutes before grilling so they do not burn. Chicken thighs stay juicier than breasts — and do not skip the marinade time.
