Ga nuong sa is lemongrass chicken, grilled the way street vendors do it all over Vietnam. Chicken thighs marinate overnight in lemongrass, fish sauce, and garlic until the flavor goes all the way to the bone. Grilling caramelizes the marinade into a sticky, smoky glaze. It is a staple of family gatherings, where the grill becomes the center of the yard. The marinade is the star, so do not rush it — the longer the chicken sits, the better.

Charred, sticky chicken with lemongrass in every bite

The marinade is salty, sweet, and fragrant, and the grill turns it into a lacquered crust that you want to pick off and eat by itself. The meat stays juicy because of the fat in the thighs, and the edges char just enough to add smoke. Serve with rice, cucumbers, and a bowl of nuoc cham for dipping. Any leftover chicken makes a fantastic banh mi filling the next day. It is the chicken that converts people to grilling with lemongrass.

Step by stepInstructions

  1. In a bowl, combine the lemongrass, garlic, shallots, fish sauce, sugar, honey, turmeric, black pepper, and oil.
  2. Add the chicken thighs and massage the marinade into the meat. Cover and refrigerate for at least 4 hours, preferably overnight.
  3. Heat a grill or grill pan to medium heat and oil the grates.
  4. Grill the chicken skin side down for 10 minutes, then flip and grill 10 to 12 minutes more, turning occasionally to avoid burning the glaze.
  5. Cook until the chicken reaches 165°F and the skin is charred and sticky.
  6. Rest 5 minutes before serving.
  7. Serve with steamed rice, cucumber slices, and nuoc cham for dipping.

💡 Chef tips & storage

Marinate the chicken at least 4 hours, and overnight if you can, for the deepest flavor. Watch the grill closely — the sugar in the marinade can burn fast, so keep the heat medium and turn often.
