Onion pakoras are the snack of rainy afternoons and evening chai all across North India, where the sound of frying batter means comfort is on the way. Sliced onions are mixed into a spiced chickpea-flour batter and fried until shaggy, golden, and impossibly crisp. They are served piping hot with mint chutney, and they disappear as fast as you can fry them.

The edges are lacy and crackly, thanks to a batter that is deliberately left a little lumpy, while the onion inside softens into sweet, tender strands. Ajwain seeds add a gentle, herbaceous warmth, and green chilies give each fritter a slow-building heat. Dunked into mint or tamarind chutney, they are the perfect companion to a hot cup of chai. Make extra; they disappear faster than anything else on the table, and a few leftovers are wonderful crumbled over rice the next day.   1. In a large bowl, combine the chickpea flour, ajwain, turmeric, red chili powder, and salt.
  2. Add the sliced onions, green chilies, ginger, and cilantro, then add water a little at a time and mix with your hands until the onions are coated in a thick, shaggy batter. Do not overmix.
  3. Heat the oil in a deep pot to 350°F.
  4. Drop spoonfuls of the batter into the hot oil, frying 5 or 6 pakoras at a time so the pot is not crowded.
  5. Fry for 3 to 4 minutes, turning occasionally, until deep golden and crisp all over.
  6. Drain on paper towels and serve hot with mint or tamarind chutney.

Do not overmix the batter; a shaggy, lumpy coating fries up crispier. Fry in batches at a steady 350°F and drain on paper towels immediately so they stay crunchy.
