Salmon Candy - sweet smoky glossy candied salmon strips

First Nations peoples of the Pacific Northwest have been smoking and drying salmon for thousands of years, preserving the season’s bounty for the long, rainy months ahead. Salmon candy is the sweet modern heir to that ancient tradition — coastal settlers and traders learned the technique and added sugar to the salt cure, creating strips that kept well and tasted like a treat.

What makes it great is that perfect tug-of-war between savoury smoke and caramel sweetness. Each bite is tender and glistening, a little bit chewy, and absolutely packed with the flavour of wild salmon. It’s the appetizer nobody can walk past, and once you’ve made your own, you’ll never go back to the store-bought version.

Step by stepInstructions

  1. Slice the salmon lengthwise into strips about 1/2 inch wide and 1/4 inch thick, keeping the skin on.
  2. Whisk the brown sugar, soy sauce, maple syrup, salt, pepper, and cayenne together in a bowl to make the cure.
  3. Toss the salmon strips in the cure, making sure every piece is coated, then refrigerate for 1 hour.
  4. Rinse the strips quickly under cold water and pat them completely dry with paper towels.
  5. Place the strips skin-side down on a wire rack and smoke over alder or cedar at 160 to 180°F for about 2 hours, until glossy and just firm to the touch.
  6. Let the candy cool completely, then peel the strips from the skin and serve.

💡 Chef tips & storage

Salmon candy keeps for up to 2 weeks in an airtight container in the fridge — if it lasts that long. No smoker? Bake the cured strips at 200°F on a wire rack for 2 to 3 hours for a similar chewy result.
