Jeyuk Bokkeum — spicy stir-fried pork in bold gochujang marinade

Jeyuk bokkeum, also called dwaeji bulgogi, is the fiery cousin of bulgogi: pork shoulder sliced thin, marinated in gochujang, and stir-fried until the edges caramelize. It is the pork of choice at Korean barbecue tables and a weeknight favorite across the country. The marinade is bold and garlicky, with a heat that is upfront but friendly. It is fast, fiery, and endlessly satisfying, the kind of dinner that makes you glad you cooked extra rice.

Spicy, smoky pork that begs for a bowl of rice

The pork comes out tender and glossy, with charred edges and a sweet, spicy glaze that clings to every slice. Onions and chili peppers add sweetness and crunch, and a final drizzle of sesame oil makes everything sing. Serve it with lettuce leaves and ssamjang for wraps, or simply pile it over rice with a fried egg. Leftovers, if there are any, make a fantastic filling for a quick rice bowl the next day.

  1. Whisk the gochujang, gochugaru, soy sauce, sugar, garlic, and ginger into a marinade.
  2. Toss the pork with the marinade and let it sit for 15 to 30 minutes.
  3. Heat a large skillet or wok over high heat and add the vegetable oil.
  4. Add the pork in a single layer and sear without stirring for 2 minutes, then stir-fry for 4 minutes more, until deeply browned.
  5. Add the onion and peppers and stir-fry for 3 minutes, until just tender.
  6. Add the scallions and sesame oil, toss for 1 minute, and finish with sesame seeds. Serve hot with rice.

💡 Chef tips & storage

Slice the pork against the grain into thin pieces and do not crowd the pan, or it will steam instead of caramelize. A brief marinade is enough, but 30 minutes is better.
