Nasi uduk is Jakarta’s classic breakfast, rice steamed with coconut milk until it is fragrant and faintly sweet.   1. Combine the rice, coconut milk, water, pandan, lemongrass, lime leaves, salt, and turmeric in a heavy pot or rice cooker.
  2. If using a pot, bring to a boil over medium heat, then reduce to the lowest setting, cover tightly, and steam 20 to 25 minutes without lifting the lid.
  3. Remove from the heat and let rest, covered, 10 minutes.
  4. Fluff the rice with a fork and discard the aromatics.
  5. Serve warm, topped with fried shallots, with cucumber and sambal on the side.

💡 Chef tips & storage

Do not lift the lid while the rice steams — it needs the trapped steam to cook evenly. If pandan leaves are hard to find, a drop of pandan paste or a vanilla bean works in a pinch.
