Orek tempe is the everyday way to cook it: cubed, fried until golden, then tossed in sweet soy with chilies and shallots. The tempeh turns crisp at the edges and chewy within, catching a glossy glaze of kecap manis that balances the heat of fresh chilies and the fragrance of shallots and bay leaves.   1. Heat the oil in a skillet over medium-high heat and fry the tempeh in batches until golden brown and crisp at the edges, about 6 minutes per batch. Set aside.
  2. In the same skillet, saute the shallots, garlic, and chilies over medium heat until soft and fragrant, about 3 minutes.
  3. Return the tempeh with the bay leaves, palm sugar, salt, and kecap manis.
  4. Toss over medium heat until the tempeh is glazed and the sauce clings, 2 to 3 minutes.
  5. Serve warm or at room temperature.

💡 Chef tips & storage

Fry the tempeh in batches and do not crowd the pan, or it will steam instead of crisping. The finished dish keeps in the fridge for up to five days.
