Dadar gulung is the green crepe of Java, a teatime kue made with pandan-tinted batter and filled with sweetened grated coconut. The crepes are soft and tender, barely sweet, and the filling is a gently chewy heap of coconut sweetened with palm sugar until it turns sticky and caramel-like. The pandan gives the whole thing a subtle floral scent and that lovely green color. They are best the day they are made, and they rarely survive the hour.   1. Make the filling: simmer the coconut, palm sugar, water, salt, and pandan leaf in a small pan, stirring, until the sugar dissolves and the coconut is coated and slightly sticky, about 5 minutes. Cool.
  2. Make the batter: whisk the flour, egg, coconut milk, pandan paste, and oil until smooth. Rest 10 minutes.
  3. Heat a small nonstick pan over medium-low heat and pour in a thin layer of batter, tilting to cover. Cook until set, about 1 minute per side. Stack the crepes.
  4. Spoon 2 tbsp of filling along the center of each crepe and roll up like a cigar, tucking in the ends.
  5. Slice on the diagonal and serve.

💡 Chef tips & storage

Cook the coconut filling until it is sticky but not dry — it should hold together when pinched. Use a small nonstick pan so the crepes come out thin and even.
