Nasi kuning is Java’s celebration rice, tinted gold with turmeric and steamed with coconut milk, pandan, and lemongrass. Shaped into a cone and ringed with side dishes, it is the centerpiece of birthdays and ceremonies, where the cone is pulled apart as a blessing.   1. Combine the rice, coconut milk, water, turmeric, lemongrass, lime leaves, pandan, galangal, bay leaves, salt, and oil in a heavy pot or rice cooker.
  2. If using a pot, bring to a boil over medium heat, then reduce to the lowest setting, cover tightly, and steam 20 to 25 minutes without lifting the lid.
  3. Let rest, covered, 10 minutes.
  4. Fluff with a fork and remove the aromatics.
  5. Mound the rice on a platter and serve with fried chicken, eggs, and sambal goreng kentang.

Do not lift the lid while the rice steams, and let it rest before fluffing for the fluffiest grains. Turmeric stains — wear gloves when handling fresh turmeric.
