Turkish Adana kebab on flatbread with grilled peppers and sumac onions

Adana, a sizzling city in southern Turkey, gave this kebab its name, and locals treat it with the seriousness of a national treasure. The authentic version is hand-chopped lamb kneaded with tail fat and plenty of hot pepper, pressed onto wide flat skewers and grilled over charcoal. This home version keeps the spirit: coarsely ground lamb, warm spice, and a blistered, smoky crust that is pure summer grill night. Every butcher shop in Adana has its own spice blend, and arguments about the right pepper are part of the fun.

Charcoal smoke and a serious kick

The kebab is coarse and juicy, with a heat that builds rather than burns, balanced by the tart pop of sumac-dressed onions and charred tomatoes. Wide flat skewers give it its signature ribbon of deep, smoky char while the center stays tender. Eat it wrapped in warm flatbread with a squeeze of lemon and a spoonful of cold yogurt to cool things down. Serve it the Adana way: flatbread on the bottom, kebab on top, grilled tomato and pepper alongside, and a heap of parsley and sumac onion salad.

Step by stepInstructions

  1. In a large bowl, combine the ground lamb, grated onion, garlic, red pepper flakes, paprika, sumac, salt, and black pepper. Knead with your hands for 5 minutes until the mixture is sticky and holds together.
  2. Cover and chill for 30 minutes so the flavors meld.
  3. If using wooden skewers, soak them in water for 20 minutes. Divide the meat into 8 portions and press each around a wide flat skewer in a thin, even ribbon, about 6 inches long.
  4. Heat a grill or broiler to high. Grill the skewers, turning every 2 minutes, until charred at the edges and cooked through, 8 to 10 minutes total.
  5. While the kebab cooks, grill the tomato halves and pepper halves until blistered, about 5 minutes.
  6. Toss the sliced red onion with half the parsley and a pinch of sumac.
  7. Slide the kebab off the skewers onto warm flatbread. Serve with the grilled tomatoes and peppers, the sumac onion salad, remaining parsley, and lemon wedges.

💡 Chef tips & storage

Use a wide, flat skewer if you have one — it holds the meat better than a round one. If you do not have a grill, the broiler works well; just keep the kebab about 4 inches from the heat.
