Crisp, golden potato patties are topped with cool yogurt, sweet tamarind chutney, spicy mint chutney, and a shower of crunchy sev. The word chaat means to lick, and one bite explains exactly why.

  3. Arrange the hot patties on a serving plate and drizzle generously with the whisked yogurt.
  4. Spoon the tamarind chutney and mint chutney over the top in stripes or dollops.
  5. Finish with a shower of sev, a dusting of red chili powder, and the chopped cilantro. Serve immediately, while the patties are still crisp.
