Egg curry is the great Indian pantry dinner, and the Andhra version is one of its boldest. Hard-boiled eggs are simmered in a spiced onion-tomato gravy that is fiery, tangy, and deeply satisfying. It is the meal you make when the fridge looks empty but dinner still needs to happen, and it always delivers.
Bold gravy, humble hero
The gravy is thick and glossy, warmed by red chilies and sharpened with a splash of tamarind, while the eggs soak up every flavor without losing their own creamy richness. A final tempering of curry leaves and mustard seeds wakes the whole dish up with a sizzle. It is proof that a few eggs and a well-spiced pot can make a dinner worth celebrating, for next to nothing. It is also one of the cheapest ways to feed a hungry crowd, and the gravy alone is good enough to eat with plain rice and nothing else.
