Appam is the signature pancake of Kerala, made from a batter of rice and coconut that ferments overnight. It is cooked in a rounded pan so the edges turn thin and lacy while the center stays soft and pillowy. In Kerala homes, a stack of appams with stew is the classic Sunday breakfast, and the batter is often started the night before as a matter of routine.

The rim is crisp and delicately browned, almost like a brittle wafer, while the middle is so soft it nearly melts on the tongue. Appams have a gentle sweetness from coconut and a faint tang from the ferment that pairs beautifully with egg curry or chicken stew. Eaten with the fingers, folded into stew, they are Kerala in a single bite, and one is never quite enough. Appam pans with gently curved sides are easy to find, but a small nonstick skillet does the job just as well at home.

  2. 2. Blend the rice with the coconut, cooked rice, yeast, sugar, salt, and 1/2 cup water into a smooth batter. Cover and ferment overnight in a warm spot.
  3. 3. The next morning, thin the batter with coconut milk or water until it pours like heavy cream.
  4. 4. Heat an appam pan or small nonstick skillet over medium-low and brush with oil.
  5. 5. Pour in a ladleful of batter and swirl to coat the sides, leaving the center thicker. Cover and cook 2 to 3 minutes until the edges are crisp and the center is set.
  6. 6. Slide out and serve warm with egg curry or chicken stew.

The batter should be the consistency of thick cream; thin it with a little coconut milk if needed. Rest the batter for 30 minutes after mixing for fluffier centers.
